Strawberry Jam

I say this is jam but I suppose it’s more of a compote and is a great way of using up any soft fruit or berries. 
It is refined sugar free, using the natural sugars found in the strawberries, along with dates, for sweetness. The mucilage property of chia seeds helps to thicken and give that jammy consistency, and as they are also a great source of essential fats, fibre and protein the sugar found in the fruit is absorbed more slowly therefore reducing the effect on blood sugar levels.

Makes a large jar:

500g strawberries, sliced

15 pitted dates, chopped

2 tbsp chia seeds
Put the strawberries and dates in a small saucepan, cover with a lid, and simmer until the fruit is broken down but with a few chunky bits remaining.

Turn off the heat and add the chia seeds, stir in well, then leave to cool stirring occasionally. Spoon into a sterilised jar and refrigerate. The compote will become more set at fridge temperature.
