Apple & Strawberry Jam Cake

Refined sugar free, using fruit and a touch of natural sweetener xylitol, you can treat yourself to a slice of this knowing it’s full of goodness.

You will need:

130g butter or coconut oil

50g xylitol

2 eggs, free range

50ml nut milk, or soy milk

100g ground almonds

150g wholemeal or spelt flour

2 eating apples with skin, chopped, one half sliced and reserved for the top

6 tbsp sugar free strawberry jam (see recipe here)

Soften the butter or coconut oil then beat in the xylitol (you could also use raw honey if you prefer). Next beat in the eggs one at a time until light and fluffy. Fold in the flour and nuts then the milk. Lastly swirl through the jam and the chopped apple.

Line an 8″ tin and bake at 180c for 10 minutes until just set, then arrange the reserved apple slices on top, and continue baking for around 20 minutes until a knife comes out clean.

Serve slices with a dollop of strawberry jam on top.
