Full of nourishing vitamins and minerals such as calcium, vitamin c, vitamin k, b vitamins, magnesium and zinc, along with protein and fibre, makes this 5 minute soup a winner for a quick and healthy lunch.
1 medium white onion
1 tsp celery seed
500g frozen peas
750ml good quality vegetable stock
Small bunch flat leaf parsley, with stalks
A squeeze of lemon juice
Natural sea salt and black pepper to taste
Bring the stock to the boil with the finely sliced onion, then simmer for a couple of minutes till soft. Add the peas and celery seed and bring up to a boil, then turn off the heat. Add the lemon juice, salt and pepper to taste, then blend with the chopped parsley.
Serve with extra parsley on top and some fresh crusty rye bread, or a summery salad on the side.
