Pea & Mint Houmous

This is a lovely summery twist on classic houmous.  We had friends over to the boat for drinks this weekend so I made a batch and served it with crunchy radishes to dip in.


400g tin chickpeas

400g steamed fresh peas

2 medium garlic cloves

1 large lemon, juice & zest

1 large tablespoon tahini

2 tsp cumin seeds

1 small bunch fresh mint

2 tbsp each olive oil and warm water

salt and pepper to taste

Blend to a nearly smooth consistency in a food processor. Will keep for a few days in the fridge but will start to lose its vibrant colour slightly.
