I made this refined sugar free granola as part of the foodie gifts we gave for Christmas.  Make a big batch and store in a tin, it keeps really well.


500g rolled oats

200g almonds/mixed nuts

150g coconut flakes

300g pitted dates/dried apricots

100g pumpkin seeds

4 lg tbsp raw coconut oil

3-4 tbsp maple syrup/raw honey

pinch of sea salt flakes


Warm the oil and syrup/honey gently in a pan stirring until combined.  Place everything except the dried fruit in a large bowl, add the oil/syrup mixture and stir well to coat.

Tip into a shallow baking tray and bake for 20-40 minutes, stirring every 10 minutes so it toasts evenly, at 180c.

Roughly chop the dried fruit, when the granola has nearly cooled mix the fruit through.  Keep in an airtight container or zip lock bag and enjoy with natural yogurt or almond milk.

This works well with dried cranberries too and I sometimes add cinnamon to the mix too before cooking.
