Kidney Bean Pate

wpid-img_20151012_065655.jpgThis is one of the simplest recipes but so good for you and pretty damn tasty.  It’s my go to lunch when I don’t have much in and need something quick and filling.

Packed full of plant based protein and low in calories kidney beans contain:

  • Vitamin B2 – important for healthy skin, nails and hair
  • Folic acid – helps reduce the risk of heart disease
  • Iron – for preventing fatigue
  • Cholesterol lowering fibre
  • Molybdenum – an important mineral that aids in metabolizing carbohydrates and fat

400g tin cooked kidney beans

juice 1 large lemon

small handful each flat leaf parsley and coriander, roughly chopped

1/4 red onion very finely diced

1 medium red chilli, finely diced

sea salt and freshly ground black pepper

Mash the kidney beans in a bowl with a fork (you can use a food processor on pulse mode if making larger amounts but I find a fork leaves a nice texture) then mix through the rest of the ingredients, adding salt and pepper to taste.  I find it good to leave for an hour or so to let the flavours infuse.  Enjoy.
