Meat Rub

Despite the dodgy soundy title this spice rub is a great all rounder for pork, lamb, chicken or vegetables. Rub it on, leave for as long as you can (min 30 min but up to 24 hours) then cook on a hot griddle or barbecue.

 

2 cloves crushed garlic

2 tbsp runny honey

1 tsp ground allspice

1 tsp ground coriander

1 tbsp cinnamon

1 tbsp cumin

1 tbsp dried oregano

pinch saffron

1 tsp chilli powder

1 tbsp smoked paprika

1 tbsp balsamic vinegar

juice of 1 lime

 

Mix all of above in a small bowl and rub over all sides of the chosen meat (if using a large piece of meat with fat or rind, or if its on the bone, score lightly first and rub in well).

*You can also mix all of the dry spices together and keep in a jar in the cupboard, then when you want to use it just add in the wet ingredients*

Leave for as long as you can to develop a good flavour, but a minimum of half an hour.

Sear on a hot griddle or barbecue, and if cooking a large piece finish off in the oven.
